Title may not be exactly right – I want to locate a plumber for rough-in work on my addition project. Rooms are a full bathroom, and a laundry room, to be tied into existing drain lines.
How much information do I need to provide? Just the plans, or a list of fixtures to be installed, or what? I expect to do a walk-through with any candidates to answer any questions.

You need to identify the location of your fresh water supply for tie-ins and also the hot water heater so he knows where to tie in or if you need a 2nd HW heater.
He will need to know where to tie into your existing waste system and it's elevation so he can design in the slope of the addition's waste system, which may affect some framing ( I have no idea what your lay out is).
He will need to know what fixtures you're adding and where.
You spoke to rough plumbing, so I assume you'll be getting specific about style and quality of fixtures later.??? But he may need some idea of your plans so he can set you up for extra shower nozzles, a jetted tub, tandem vanities or singles....
Give him a list of fixtures he has to plumb and state who is gonna supply what. If he is gonna supply the fixtures, you need to pick them out (probably at a plumbing supply) and specify any colors if there are any, - white is the cheapest. What about the water heater - size - fuel? Include how many feet it is from the house to the sewer and to the water supply if that stuff is applicable. Give him the house plans. He may want to know what the floor systems will be made of so that he will have an idea of how difficult it will be to make his runs. You probably also need to have an idea of what kind of supply pipe you want (this was discussed here within the last week) - pex - cpvc or copper. If there is natural gas, is he or the HVAC guy gonna hook that up? That should cover most of it.
