I have a 5ft clawfoot tub I am planning on putting in a remodeled bath that is about 1/2 inch shy of 60 inches wide (5ft). I am wondering what options I might have to make it fit ok. Both walls on either side are 2X6 plumbing walls. One option I was considering was building a niche (bookcase, etc) at the end of one wall so the tub could stick inside it some, but not sure thats the best option.

Find a 4.5 ft. tub. The old tubs came in a range of sizes, your space seems a bit too tight for that tub. With a free standing tub you really should have a little space around it, at least a couple of inches.
Should be able to trade down in size pretty easily even up or a small cost.

I like your niche idea. Gives the space some depth, some texture, some shadow lines. Practical too. Big tubs are so nice to stretch out in.
Edit: Another way is to angle the 5' tub in the room. This would give you better access to the back side, and more clearance at the ends, without niches. I've seen it done and it looked great...a break from the tedium of conventional box thinking.
