A plumber completely cut out 8″ sections of my floor joists where sewer pipe ran down over the joists. He didn’t notch or put holes in them…they’re completely cut out. How do I fix this? I know if it were 2x lumber, I could frame a boxed opening connected to both joists on either side. But this is engineered I beams. Any advice? Thx everyone.

The people who suppleid & engineered your floor have your answer. You'll probably get good ideas here but the defnitive answer comes from your supplier with the paperwork & an engineers stamp to satisfy the BI.
Ps, Don't use the plumber again and charge him for the damages.
What John said is right on - The fix has to come from the manufacturer's engineers.
They'll want to know the span of the I-joist from bearing to bearing, how far away from the bearing the joist is cut, the spacing, and the type of I-joist. (Each manufacturer has a lot of differnet types)
They'll also likely ask if the sewer pipe can be relocated, or if the area will have to be headered off to adjacent I-joists. That will affect how the repair is done.
As John said - Backcharge the plumber for the repair. That's the ony way for them to learn not to do this kind of stuff again and again.
I'll reiterate what others have already said in that the 'fix' must come from the supplier. As a framer I've fixed more than a couple of similar scenarios and for I-joists the solution isn't always straight forward. We were lucky one time in that it was just one joist and we were able to just head it to the single joists on either side of it. Other times I've had to sister in doubles and head off the effected area. And other times it was bad enough that tearing them out, re-routing the plumbing, and replacing the joists was the best solution.
Either way... I'd be billing for my time. And I'd expect that cost to be passed on back to the plumber from the GC. Certainly not all of them, but waaaaay too many of them need to have their Recip Saw Membership cards revoked. You really oughta need a license for one of those things.
