I have been building my own workshop for some time now. Finally about to close up the interior walls and installing a few runs of pex to a bathroom. I bought some 90 Degree pex to copper stubout elbows. These are the ones withOUT the mounting plate.
So how do you folks mount these? I have thought up a couple of ways with some 1x or 2x blocking and some pex hold down clips, but figured someone that does this for a living had probably devised a streamlined method.

Well, I've seen them mounted with a couple of nails bent over. Not that I recommend that.
I've always used the winged elbows (with the two little nail/screw holes). They don't cost a heck of a lot, and make for a super secure mount.
Seconds on the drop ear elbow. Either the crimp type, or the Sharkbite stab type.
Nipple screws into the drop ear to go through the wall.
Then quarter-turn ball valve onto nipple. Solid.
You can always buy a separate copper mounting plate, and solder the elbow into a hole in that. This is what I've seen in commercial construction.
