Does anyone know if it is possible to add a humidity sensor to an existing bath fan. I’m finding it very difficult to get my kids to turn the fan on before running the shower. I know that they sell fans with the switches built in but I’m sure that adding a humidity sensitive switch in the room would be far less money.

wire it to the bath light.
it'll come on when they flip the light switch.
if that don't work.....wire the recepticals to the light switch too.
no hair dryer or curling iron till the light's on..then the fan'll start humming.
Or....yell louder. That'd be my first option. ....if they are showering....flush the toilet each time the fan isn't running.....won't take long....negative reinforcement get's them every time.

There are a variety of humidistats available that have plenty of wattage rating to switch a fan on and off. About $60-90 in Graingers'. A better plumbing HVAC supply house should stock them. Any could order them. I've seen them occasionally on ebay sell for $20 or so. Just run it in parallel (IHMO) with manual switch. Then if someone farts and decides to use the fan, it goes on. And, if they don't hit the switch, the humidistat will once the air gets humid and will run it until the humid air is clear. In the Midwest or East Coast, you have to set it higher in the summer or it will run all the time.
They all fit in 2x4" single-gang box. So you could use a cut-in box 8 or 10 inches up the std from the switch box and run some 14-2 or 14-3 (check the wiring on the humidistat) between the old and new box. The incoming hot wire connects to the switch AND the humidistat. The other terminal of the switch AND the other terminal of the humidistat is connected to the fan.
