OK, this is a bit of a sheepish question.
I know that my last few hot water heaters have had a little dial to adjust the temp. Something that says “warm, hot, very hot” or something simplistic like that.
New house. Kid who is figuring out faucets. Very hot water, and lots of it.
Here are two pics of the device slapped on the side of my heater. The metal cover has been removed (by me, for these pix…)
I have absolutely no clue how to adjust the temp in this tank.
Any help?

I looked up the Honeywell SV9501 and it is only an gas regulator/control valve/electronic ignitons.
It gets an electrical signal from a thermostate. It does not have any built in.
In fact much of the installion informtion shows it being used on furnace.
Look on the left side and you will the connector with the 2 blue wires and the back. That is for the ignition and I think flame sensor.
Behind it, just under the drip leg cap is another connector. That one connects to a 24 volt transformer and the thermosate.
Follow the cable for that. My guess that it goes to a juntion box on the heater. And that is probable where the transforms is. The AC power will connect there. The thermostat is probably in the junction box, but if not there should be another pair of wires runing to it.
