My mason is installing cultured stone on a new poured foundation. I am concerned the stone will not adhere to the wall unless the disel that was used to keep the forms from sticking to the concrete is removed. If this is a valid concern, how would I prep the surface? Also, we are aproaching winter and freezing tempatures. The manufacture stated type n mortar, without additives, is recomended for any tempature to install the stone. Will morter freeze and cause the stone to fall off?

It won't make any difference. Type N is formualted for this type of application. If you add anything else, you may actually weaken the bond. Concrete wall, morter, cultured stone - its not going anywhere.
If you are really concerned about the quality of your mason's work: make sure the joints are stuck well - smooth and no holes in the morter joints (called "bee holes" around here). If you live in a climate with heavy freezing, this is where problems occur. Water gets in, expands, and over time loosens the stone.
Finally, I would be careful - most mason's I know would not have a problem throwing something at you if they thought you were telling them how to do their work. Myself included :)
