I’m restoring the 3rd floor of a 1920’s house. The walls and ceiling are plaster with rounded edges. The ceiling had to be removed because of water damage in the past. I have removed the ceiling and reinstalled with drywall. My goal is to match the plaster wall to the drywall ceiling with the classic rounded edge. I have tried plaster of paris but it dries way too fast. Is there an alternative product that does not dry as fast but is durable enough to withstand cracks? Keep in mind that it will need to be installed up to 2″ thick (in areas) to get the proper look.

Don't know where you are (hint: fill out your profile) but a few questions:
If the plaster needs to be up to 2" thick, was it not possible to shim out the joists?
Did you investigate blueboard, which is designed to have a plaster layer on top?
What about a second (third?) layer of 5/8 on top?

Structo-lite is what I use for coves, should work fine. It's perlited gypsum plaster.
Don't know where you are - try a real drywall supply house or do a search.
What is the radius? That will determine whether you should use wire lath or not. Is this a smooth finish?
