Insulation for old balloon framed house

I have an old balloon framed house that has no insulation in the walls, or vapor barrier. I have been told that it is best to leave the walls open so that they can breathe. Is this correct, or do I have some options as far as insulation. I do not want to take any walls down, but small holes for blowing/spraying in are fine.
