Just wanted to get opinions on the best type of wood and joinery to use on an interior, swinging screen? I have 3 outward swigning casement windows and am planning on making interior screens that would swing inward to allow me to open the windows and then close the screens.

If this is something that is likely to be done with some frequency I'd tend to view it as a cabinet door. Specifics will depend on the style of "cabinet" you want. The only other thing is that you probably want the entire assembly to be easily removable, so loose-pin hinges or snap on/off cup hinges or some such would be appropriate.
If the screen is only rarely opened then I'd just use some sort of snap or screw fastener.
