I’m building my own 2.5 story home, and project to live on the bottom floor as I finish work on the top levels. I’d like to insulate all interior walls (for sound – just 2x4s) as well as floors. I’m wondering whether, aside from cost, there are disadvantages of doing this – if, for example, I want to fish wires for some outlet I haven’t thought of. I thought of comprimising by leaving a few spaces between joists and studs open for this purpose. Thoughts? Thanks.

You could run a bunch of 'strategic' PVC conduit for future needs. The stuff is cheap.
I designed a home without considering sound transmission, and regret it.
For critical walls, consider offset studs and soundboard sheets.
