Is pex plumbing noisy at all? How is it mounted at the end point before connecting to a fixture. Assume shut offs aren’t needed in a manifold system.

They make copper stubs that you crimp on the end of a pex run. Much more rigid connection that way. The stubs often have plates attached to them so they can be nailed to the floor.

I always use shutoffs mounted to the copper stubs. If I wanna turn the water off in a hurry, I don't wanna have to go to the basement if I don't have to. Also, it's easier to hook stuff into a shutoff, since drops are pretty much made for them.

with the wirsbo (upnor) system... we use a copper ell that is already sealed at the outlet end (for testing and has the barbed fitting on the other... cheap when you conside what it replaces... we mount this just as you would copper... with this you do have a copper stub-out...
we have never run a manifold system with pex... use it just like we would copper... with cutoffs at each fixture...
i think it is somewhat quiter just because it usually sweeps vs 90's... much fewer fittings... and alot better flow...
