It depends.
It depends on how large the slabs are and whether or not the fabricator charges you for waste or not. Seam placement is subjective.
There are guys who are posishing stone seams to near-inconspicuousness. They've got a website, but I'll have to look it up. This may make seam placement a non-issue.
The granite I was looking at was all 9' or 10' long slabs. We have a 15' counter and a 15' island. The counter seamed at the sink; the island at the cooktop. Easier to make it look "seamless" if you have a regular pattern/coloring. We had too much stone to do that so went with a pretty dramatic pattern. Luckily in the stone we wanted they had an end-to-end bookmatched set - results attached. (Try to ignore the reflections from the vent hood - hard to get good pics of granite at night!)
