Old victorian home and the bath is gutted to the studs and the subfloor is out. The plumber and the electrician are going to do their thing this week. After that the sub floor has to go down. The floor joists are nomonal 2×12’s and they have been hacked and bored over the years. Although structurally sound they are not really level an the top edges are pretty rough. My question is what is the best way to get a good level subfloor. I am leaning towards sistering 2×10’s to the existing joists and and establishing level with this new lumber. Any suggestions are appreciated. Thanks in advance.

Sistering is one of the best and easiest ways. Unless you are making up for structural defects in the existing joists you don't need to use 2 x 10's. You'll get less shrinkage if you use something like 2 x 6's.
I was thinking of using the biggest lumber I could to allow for the necessary chopping and hacking for all the crap running through the joists.
