I’ve recently been asked to install a low slope roof on a family members house. Ive been building for a number of years and done a ton of asphalt shingle but im not too familuria with torch down. i like the 3 step system so the fastener wont telagraph threw the finish layer but i would like to use screws insted of nails.(personal preference) I would like to have a dark granual finish layer when done, what would be recamendatioin on certain products and what the real benifit between 3 layer vrs 2 layers? thnaks

Forget torch down unles yualready have a tar pot and pump.
Was good for residential back when a keg of tar was 75 cents vs $20 + now.
Copper would be nice, followed in order of preference by steel,
Cheapest option, least labor - 50% lap selvage roll roofing applied on the hottest day of the year, use cold proceess asphalt adhesive .

for torchdown? The mod bit roofs I've had installed went down with a torch, but weren't mopped.
Stay away from torchdown
Unless you have someone to train you and lots of good fire insurance.
For your needs and experience, go with one of the peel'N'stick modified roofs like polyglas
I think junkhound was confused on this one. No tar kettle needed for torchdown. The torch product was developed to let amatures do what experienced crews with lots of investment in equipment used to do.
Another option is EPDM for you. I can't say without knowing type of house and flashings reqd
