Is anyone aware of Maine code on cabin construction? Somerset County.
Need to know if 2x6x24″OC inside wall (10′ high w/10/12 pitch gable ends)and cathedral ceiling studding would be ok?
Can’t find anyhting online except that there appears to be a newe building code in parts of Maine.

Welcome to Maine and to BT
As I understand it, Maine requires that any municipality having a perm population of 2500 humman heads must have a building code based on one of the three common national/international codes. Smaller communities and rural areas have no requirement to enforce any building code.
Land use codes and the plumbing codes are of course, something else, very strict.
So you need to know if the local town/ship has a code for you. The place to learn this is the local Planning Board. If such does not exist, the land use state model is enforced by LURC by default. Since your Q is structural in nature, they would probably not be concerned.
I don't see any reason why - based on the little detail given - you should have any trouble even if there are codes enforcment.
In any walls over eight feet tall, you want blocking both for firestop and for stabilizing the individual studs.
