I am looking at doing a residential roof-over with painted steel roofing (not standing-seam) and am looking for some info on installation tips (handling penetrations, flashing, etc.) as well as labor figures for installation. Anybody know of any sources?

There was a good article on metal roofing in Fine Homebuilding last year. You might try the archives.
My labor figures are usually whatever the material cost are, which for me is 1.25 to 1.75 a sq foot.Thats for a one or two story house w/ a valley or two . If you have a bunch of valleys or multiple roof lines I would charge more. Two guys could easily spend a day on a couple of valleys.
Your roofing distributor should have a detailed book on flashing and penetrations. I have one from BHP that is really detailed.

ps. Don't put your metal righton top of the asphalt shingles ,they will wear thur in a couple of years.
