What’s the best choice for installation a new outlet for a cabinet over the stove microwave and range?
I have plaster walls and in the past the new work boxes have sometimes been a challenge because of the wall thickness, but cutting them is worse.
Since space isn’t a big issue (I don’t need to store more than one or two bottles of whiskey), is doing a simple wall mounted box in the cabinet a good option?

Around here a recep in a cabinet is a code violation, but there can be exceptions. (The reasoning is that a dummie will plug in an extension cord which gets slammed by the door.)
I wanted to hide a cordless phone base in a cabinet so my inspector let me do it provided one of the plugs was disabled by breaking the little tab on the receptacle. You could probably do the same thing.
Remember you'll need to cut a hole in the back panel of the cabinet.
Odd to hear a recep in a cab is a violation-I'm sure that one will get broken often-especially since the instruction manuals offer this as the install directions.
I have changed out micro's that had surface mounted boxes. Don't know what can of worms that opens........but, in all cases, the wiring entered from the back so no wire or sheath was visible. If not an option, then should be run in conduit-rigid or flexible.
Seems like either a surface mount or old-work box would do the job. With surface mount you need to have the cable enter from the back unless you can reasonably argue that it's effectively protected from damage.
