Am new to this site and I am seeking some advice.
I have an old basement slab that is really uneven. My intentions are to convert the dungeon into a habitable area (finished basement) and I am wondering if leveling the floor out with gypcrete is the best option, or tear out and do new? Tearing out is the least favorite option, but I would like to here from a remodel pro who is familiar with this situation.

Welcome to BT. I'm not familiar with gypcrete so I'm just bumping your topic back up to the top of the list so your question will be read by someone who can answer it from their own experience.
there are other leveling floor grouts as well, but floating over what is there is probably the way to go.

I should mention that it is very irregular. I shot it with a transit, and there is up to 1-1/2 differnce in elevation. I would really like to just level it out, but I am worried that it may have bonding issues. I don't want to break it up and pour new, but if this is my only option then thats what it is.
is it up and down because it was finished that way or because it has cracked and moved ?
what is its general condition beyond the irregularities ?

Well, there is some new, and some old. It does not have any cracks, and seems to be very sound otherwise. I had some new concrete poured a few years back after I did some plumbing for the bath. The old part is dry, and a light dusting comes off when you sweep it. I was looking online at Maxxon products. Anyone familiar with this product?

Just wondering if your height is going to become an issue if you add to the existing slab?

No. It is an old house with 83" right now. Max height I would lose is 1 inch to flooring materials. Going to be utilized as rec. area and bedroom (non conforming with egress).
