I’m putting a bid together for a remodel and the folks want to change over to an on-demand (aka ‘flash’?) water heater. In and of itself, not that big a’ deal, but they want to put it in the overhead, they definately want gas-fired, and there is only 36 inches of height at the peak of the roof. Is it possible? Difficult? Out of the question?
Also, specifically, what brands (and models?) have people had good experiences with?

The vertical space available is only 36"? That would be tough in itself, and most codes require 30" - 36" clearance in front of the unit for service access. It sounds like you need to look for a better location. Laundry room, utility closet?
A friend installed a Bosch instant water heater in his garage and has been very happy with it. He says it significantly cut down on his gas usage compared to a regular gas storage water heater.
Given how much stuff (that may break) they cram into these units, I would put them in an easily-accessed space, not an attic. I also bet that there are minimum clearances all around them (the installation manual would answer that) so that a mere 3' of space will probably not cut it for a gas-fired instant water heater.
