In the next week or so my exterior will be finished and the plasterers will start.
I’ve been told to wait 30 days before I paint.
What happens if the plaster is not cured in this time or I painted sooner than this, not that I would……….

The world will tilt off its axis and go plummeting into the sun. Please don't do it.
Paint, being vapor proof, will bubble as the plaster continues to outgass moisture.
Read in a thread here somewhere not to long ago, where an oldtimer plasterer said to wait 6 mon's then rinse with vinager before painting, but maybe he meant with oil based paint. Didn't say.
Whatever, do as your plasterer says.
