Now I’m scratching my head. I have a client that wants a new sink. Ok, no problem so far! He has bought a faucet that has an eschuteon plate and with a separate sprayer. The last part of this issue is his dishwasher/disposal overflow that pops out the top. The problem is with the plate and the separate sprayer, all four holes are used. How do I deal with the overflow? Is there such a thing as a 5 hole sink? I guess I could drill another hole, but it is a stainless steel sink and I’d rather not. Thanks in advance.

They can be drilled. We had the plumbing supply store drill a hole for our soap dispenser. I think they used a fine-toothed bi-metal hole saw with a pilot bit.
Drilling Stainless Steel
The other post is correct, but bi-metal hole saws can get pricey, it you know an electrician you could borrow his knock-outs.
First verify that code and/or the DW mfgr requires the air break. Most mfgrs don't require it, and many codes do not.
