In an effort to reduce cost, I want to substitute the plywood subfloor with a 1 x 6 or 2 x 6 t&g subfloor during the framing stage, and finish the floor at the end of construction. The home will be constructed atop concrete pilings approx. 30″ above grade, and the floor joists will be insulated, and their underside concealed in 3/8″ plywood. Can anyone recommend a wood species, and has anyone done this before?

How in the world could T&G wood flooring be cheaper than plywood?
plywood plus 5 1/2" W conventional prefinished flooring plus installation minus plywood plus 5 1/2" W subfloor installed by framer plus finishing = (should equal a savings.) Aside, any thoughts on the concept?
O.K - I'm with you now. I thought you were trying to use T&G lumber in place of the plywood, and add finished floors over the top.
Never heard of anything like it. Will be interesting to see if anyone has some input.
It's done all the time in timberframing, where the "underside" is the finished ceiling and the top is finish floor on a different floor. With 2x6 T&G, you shouldn't have any trouble using pine or something harder. Check out http://www.harmonyexchange.com they used to have specs for all of them and sold 1x, 2x, 3x and 3x laminate.
I beleive I would go with dimensional 1" or standard 2" thick material. Plywood ain't cheap and you might be able to have your T&G milled and still realize a substantial savings.

Well this is my 1st shot at the new &"improved breaktime, hope things work.
1 layer of t&g can cause minor problems with dust and dirt working its way through the cracks and falling into the room below. So don't let little Johnny bounce on his bed (or even be in the room) if its above the kitchen. Crunchy food ain't cool
