I just measured a roof. Big surprise around back.
There are four 4 x 8 solar panels to heat the swimming pool mounted on the roof.
So these need to be removed for reroofing and reinstalled.
I called the couple of local pool places and they want nothing to do with it.
How much extra do I charge?
I’m thinking $1,000 (mostly due to risk/liability). Or should it be more?
Or should I just pass??

You're a roofer,not a plumber. Have the customer take care of it and reinstall when you're done.
From the picture I would say these are not the higher quality ($$$) solar panels, but are black polyethylene tubed solar mats ($) that are not as expensive as panels. Quite common in the sun belt.
These solat mats are assembled with clamps and P/E tubing in a very simple system as compared to rigid pipe panel systems. The pool pump provides the circulation in conjunction with the filtering cycle.
Although, said to be ultaviolet resistent these mats degrade with time, heat and sunlight, becoming "brittle" and eventually crack/split/fail.
Your removal of the units from the roof may cause this to happen....it is not your fault if there is a failure...but will your customer understand this when the time come to reinstall and pressure-up the system?
That is why the pool people will install new, but will not mess with retro's!
Likewise the placement and installation of the hold down brackets may be troublesome sites for leaks on your new roof.
If you are game for a new challenge and your customer will back your position (in writing) as having no liability for system failure....then have at it...on a T&M basis.
If anyone of the parties is hesitant, consider having a pool company quote a "new install" instead of a "remove & reinstall"!
