I am considering adding a room addition to our house built in 1949 that has a concrete block foundation. I am looking for suggestion on how to seal the joint/ inside corner where the new poured concrete foundation will join with the existing block foundation.

Install a strip of water bar, centered, the full height of the foundation, on the block side, centered between your forms of the poured side.
Any commercial concrete accesssories supply store will be able to help you. It is manufactured by several sources. Most are peel and stick and are activated by the concrete during the pour.
