I’m tiling over the walls in my kitchen for the backsplash. In the demo, I’ve knocked loose some big (1 sqft) patches of the plaster. What’s the best material to fill in with? Thinset mortar or Quickcrete mortar mix (they’re different, arent they?) or something else?

What did you expose? Sheetrock, lath, ... ?
If you have the space available, you could overlay the whole area with 1/4 or 1/2" hardie, spread a little thinset in the depressions first.
I'm sorry, I thought you wanted it done the right way.
I would start by screwing drywall to the area to roughly build it up about even with the wall.
Then get some 20-30 minute smooth set , first apply it thick and pile it on and rough smooth it with a puddy knife or dry wall blade.
Then once its dried and sanded, ill go over it again with a wet mit mix to smooth out the rough areas then sand.

Tile is going over it, so I don't think it needs to be that smooth, clean and pretty. Just enough for the mastic to adhere to, right?
Underneath the plaster is gypsum board (one area) and cinder block (other area). The areas are so small, at only about 1 ft square, that it'll probably be more work to try to patch with pieces of drywall. At least that's my thinking. The plaster is about 1/2" thick.
Set me straight if I'm all messed up on this... I'm trying something different this time and asking questions BEFORE I do the work so I'll only have to do it once! Ok, maybe twice, but that's still an improvement.
1/2" thick by a foot square ... I would either use the Durabond setting joint compound, or thinset.

then sense it(the wall) is not going to be seen I would use anything maybe 1/2 ply to build up the 1 ft square area and screw a hardibacker to the studs and put the back splash right over it.
I have with success use granite tile 12X12 for a backsplash and set them right on the wall w/o the need for a backer board . So that is a option also Buckism: Will show you the the way
