Let me begin with I’m a handyman who does sheetrock. I’ve done my share in the past, but mostly a wall here or a patch job there. I’m rocking a converted garage that will be living space, 10′ ceilings with roughly 1500 sq ft of wall/ceiling space to rock. I’m working at T&M, but how I would price a job like this if I were to do a bid?

My guys charge me $21 a board - $10 to hang, $11 to finish, no matter what size boards. They supply the mud screws and glue, I supply the drywall.
Buy the yellow hanging machine if you are doing 10' ceilings alone, or rent if this is a one-off.
Criddle, Dont know where you're at, but in the metro Detroit area, i'm paying close to $2/ sqft. That may be a little high though. That includes all materials. I leave a house of studs and come back four days later ready to prime. The only thing I need to do is dispose of the waste, cant seem to train the DW guy to pick up the garbage. It works out this time though cause were conditioning the crawl which includes 2" rigid insulation that the city makes us cover with drywall for fire protection. We figure we'll use up most of the scrap for that.
I'm just north of San Francisco, but I bet the pricing is the same as in other major cities. Considering I'm doing all of this solo, I think I'm on track with how quickly it is going up. Thanx!
You should fill out your profile, knowing your location will get you closer in the ballpark for what your local rates might be.
If you're a handyman or remodeler I would suggest you figure out how long the job will take you and multiply that by how much you want to make then factor in the cost of material and it's mark-up.
I say that because you are not going to be as efficient or quick as a drywall contractor who does it everyday.
As an example, when I sub out our drywall work the hangers will come in and hang a basement in half of a day, if I send out two of my guys to do the hanging it takes them at a day and half if not more for the same job. The finisher will come in and tape and fill the job in about half of a day, it would take 2 of my guys to do the same work in a day. So pricing by the square foot is not going to work for you unless you are as quick as the drywall contractors.
All that said, If I supply the rock I have a guy that will hang and finish for around $1 sqft including bead, tape, mud, screws, glue, etc.. Another one of our subs will charge closer to $1.75 sqft including all the material. None of those prices include scrap out or clean up, we do that ourselves because it's less expensive.
Smaller jobs cost more then larger with the least amount being around $250.00 to come in and blend in a patch in a textured wall.
