This is a quickie, I hope:
I’ve built a prehung exterior door with 1-1/4″ thick jambs. I’ve nailed 5/4 x 4 casing trim to the exterior edge of the jamb and installed the unit. Now, do I also nail off the other side of the casing through the sheathing and into the studs, or do I leave it float?

Given the info you provided it sounds like I would nail the outside edge as well.
Nail it.
The casing isn't structural; you don't have to hit the studs with the nails (although it won't do any harm if you do).
That said, you should nail it on both edges. If you don't nail the outside edge of the casing, it could warp and cause the joints to open up.
