Rebuilding a one car garage – Ridge beam
I’m looking to rebuild my small one car garage which has cross ties at 7′ high. I’m looking to reframe the roof to get a full height of 8ft and I don’t want the ties to go across the top of the walls. Instead I would like a cathedral type ceiling in the garage. I understand I need to beef up the ridge beam but what is a good size?

Generally it's best if it's long enough to reach from one gable to the other.

The proper size for the ridge BEAM is whatever the calculations tell you. I'm no calculater, but if you go to your lumber yard and take a drawing of the dimensions of width of bldg, length of bldg and size of rafters, the opening of the garage door if under the ridge (and it's header size) , they can send that off to a LVL supplier and they'll do the calcs for you.
Depending on how the garage was built, they may tell you to increase the size of your existing rafters.
also-increase the header size (if the calcs call for it and it's under the ridge).
You'll need a continuous solid support on the other end, all the way down to the foundation to support the ridge beam.
There are a couple other possibilities such as raising the "ties" up 1/3 of the distance from top of wall to ridge.
Tieing the walls together with cables and turnbuckles.
