It isn’t a bad idea to do 2/3’s at a time, so you have a heavier wear layer in the middle, that is the way I do stairs.
You could also use shellac, it dries very fast, and is a nice finish, (I think nicer than poly, but I am not starting that war).

You can walk (lightly) over a water based floor finish in about an hour, and second coat in four. There are still alot of chemicals coming out of the finish even though there is minimal odor. I would recommend a weekend vacation with a waterslide if you have kids. If no kids go for the place with the spa.

I've been using shellac for the past 6 years on various jobs. And love the stuff. Dries fast. No caustic chemical clean-up. Looks great. Easy to apply. But I have been told that it is much too soft to use on flooring. I haven't tried it. Was I misinformed?

You were misinformed, ask pro's what they used before poly.
pete.... couple of things.. first... save your 2d cut sawdust.. and mix it with your first coat finish to make a paste.. work the paste into the cracks with a squeegee...
let it dry.. then sand ..
2d... can't you span the hall with some planks on blocks ? so you can have access ..
3d some of the waterbase finishes are really good and fast dry.. figger about 6 coats for a high traffic area like that ..
i haven't kept up with what's out there.. but some of these guys can recommend some of the cross-linked water finishes..
other than that.. ask lisa to keep the noise down if she's sanding during your favorite tv show...
