An entry door on a 100yo-ish house has a VERY moody skeleton key lockset. Does anyone have a source of door hardware that would let me modernize the lock but still fit the character of the house?

VanDykes Restoration and Crown city Hardware. I've just sent Ron at Crown City several mortise locks to repair. Supposedly they can work wonders.
But your local locksmith might be able to do something too, if they have been around for a while in that area.
