Replacing door slabs with thinner ones
Exterior double doors.
The current doors are 2″ thick. They appear to be 1 1/2″ slabs with a 1/2″ overload of T&G panneling to match the exterior finish on that wall.
HO has some replacement, full light door, standard 1 3/4″ thick.
The exterior is painted, and the interior is stained.
What are the option of making them fit?
One would mount so that the inside side would be at the same location. Then add extensions to the stops. That would be relatively easy. However, the hinges are too wide (deep).
(PS. I forgot to take measurements of the hinges to see about if different size hinges would work.
The other option is to move the doors outs so that they hit the existing stops.
But that would inset them 1/4 from the existing casing on the inside. Would that look “strange” or not. I suspect that is one of those things most people would never notice and even when pointed out to them wouldn’t care.
Has anybody dealt with a case like this before.

Does the stop have the built in dado for the whether strip? If not then its fairly easy to move/add on to the stop. If it has the grove for the weather strip then its a different deal.
If the currant stop is part of the jamb, which most exterior doors are, you could plane it off and add one that had the grove for the weather stripping.
Or you could just hang the doors where the stop is and have them inset into the jamb 1/2", you may have to bevel the door a bit more so it clears when shutting.
The hinges aren't much of a factor. You can get different hinges.
