Residential Interior Motion detector switches – 3 way circuit
I want to put a motion detector switch (thermal/infrared?) on one of two 3-way switches in my garage. Should I look for a 3 way type? (Do they make em?) Should I install one on one of the switch locations and “disable” the other – say, put one by the house/garage door and “disable” the one at the serive door (just “around the corner” at the other end of the same wall at the back of the garage)

I'd think you are on the right track ... disable one and keep an occupancy sensor for the other. After all, the occupancy sensor theoretically takes the place of both. Problem would be if the other entry is 'hidden' from the sensor, you may not trigger it like you want when you enter that way. There are other alternatives where you could mount a sensor on the ceiling to cover the room and wire both switches to the 'on' position.
