Rodents have chewed through plastic garage door bottom seal
Live in the woods. Lots of field mice and chipmunks. Rodents have chewed through the plastic (rubber?) seal at the bottom of the garage door. Is there a seal made of a material rodents can’t chew through? Advice? Thanks.

I'm only mildly familiar with what's available-I'd ask a garage door company.
But, I've seen a harder rubber like material that closes onto a metal threshold, with a bit of an interlocking bump in it.
How long did it take them to do the deed? decades, years or weeks.
I live in the woods also and the 18 yr old bottom of our door, while less sealable than day one is unchewed. This is a detached garage. I do keep the bird seed in drywall buckets (lids just layed on) in there, but to date only an occasional inquisitive squirrel when the door was up. He/she doesn't care for sunflower seeds, was more interested in a place to stash his walnuts.
Is this a cosmetic problem for you? If so, simply remove the strip entirely, or cut it back. No way is a garage door going to keep out mice, even in the best of circumstances.
Rodents usually chew their way out. The problem is getting them all out and sealing up all the holes so they don't come back in. Once they do chew a hole they will return to that path and open it up again of they can. You pretty much have to kill all of them that know that hole and wash away the trail.
I would wrap the bottom of the door with metal, look for any other access paths, trap out any that are still inside and keep that door closed at night.
