Hi,
I’ve got two low-slope terne metal soldered seam roofs, one over a sunporch and one over a box window. I painted the one over the sunporch a few years ago with the aluminum fibered roof coating from Cheapo Depot and not long after it was peeling in spots. By now they’re both in need of a new coat of something. A roofer who did work on our slate suggested that we should paint them with rustoleum instead of the fibered roof coating.
My question is should I just use more of the fibered roof coating, or switch to the metal paint? Also, does the old paint need to be completely stripped off or just taken back to “tight paint” as my boss told us when I was painting houses?

Unless they have a product specifically for that usage, I doubt Rustoleum will hold up. I've used the 'pro' Rustoleum on a shed and the south side was peeling within two summers.
I don't suppose the surface is flat enough to adhere EPDM rolled rubber roofing down? Properly installed, they would have a decades long lifespan. The fiber-coating stuff will have to be redone every year or every other year.
[edit] there is also the white elastomeric roof coating, but in my experience it also has to be recoated every couple years.

Roof coatings of that nature shouldn't be the O Henry type stuff although the candy bars are ok.
A roofing supply house will have much better materials available than any latex base.
I'm trying to remember. Tops is one brand and there are others. The particle percentages are what will alter the pricing up and down.

Check out over at http://www.oldhousejournal.com There should be some pointers there for roof coatings. I've heard of several types specifically for metal roofs.
