Not knowing your location, wetness, soil type and what not all this will be just a ballpark suggestion.
Could be that the best approach is to dig down around the building and install rigid foam around the perimeter if the building will be constantly heated, similar to a frost protected concrete foundation.
That would work if you plan to set the building very low, with joists directly on crushed rock on grade.

The first thing to bin is the "I'll be clever, pretend it's a shed, and skip the permit" mindset. Your're building an office, a small building, and that's all there is to it.
