I'm sure this isn't the real reason, but I had the pleasure of visiting a sheetrock plant and saw the process involved in it's production.
First thing that caught my eye was the 4x480 ft long sheet..........that was cut into 16 ft lengths b/4 flipping and running through the ovens.
The paper coming off huge rolls, creasing and folding up of the edges so the gypsum slurry wouldn't run out, the top paper going down.....and then the folding and pressing of the edge (taper)............slow dry/hardening for a few hundred ft.
A great place for Information, Comraderie, and a sucker punch.

Cal's right drywall is an extrusion process.
That's why you prefferably run it cross-joist also.
