I want to reside my house with Vinyl. Its currently plywood with 1″ battens every 16″. Any problem with filling between the battens with 1″ foam and going over with the vinyl

use 3/4 foam...

I would strip off the battens and if you want run continous foam.
A better insulation, B better water protections, and C it is a lot lot easier.
