I need to replace about 2′ of the sill on my balloon framed house. Is there any reason not to use 6-7 treated 2×8’s screwed and glued together versus a solid beam?

the shrinkage pattern is different on framing dimensional lumber than on a beam.. a beam typically contains the heartwood and surrounding annular rings..
the framing 2x's are all annular rings.. ie, the main problem will be shrinkage.....
in the dimensions you are talking about.. from wet wood to final dried state... maybe an inch of shrinkage.....
