Simple1/2 in copper elbow sweat question
1/2 piece under my house. I need to sweat a copper elbow on.
do I sweat one side, wrap it with wet cloth to stay cool then do the other side?

2. heat it up and do both sides at once?

Both at once is the usual way
both sides at same time, direct heat to one side sweat, direct heat to other side sweat

Usually I direct the heat right smack in the middle. Especially with 1/2 inch you can sweat both at the same time.
As others have said, do both sides at once. If your under your house, bring some water with you just to make sure you can stop a fire if you catch something under there. Its just a good practice.
In fact, it may pay to just wet down your hair in advance, before you crawl under there.

I'm gonna add just a small bit here.
Let the copper melt the solder not the torch.
Use a trailing pattern let torch lead the way of the solder.
