I’m replacing a three-step open stair from the garage to the house with a three-step closed stair. The stairway will be 36″ wide. The template I used instructs: “Step treads can be made from a pressure treated 2×12 bull nose tread, a standard 2×12 cut to length, two 2×6’s or two 5/4×6’s.” Is there some reason not to use 5/4×12 bull nose. I have cut a third stringer for added support of the 5/4 bull nose.

If you're concerned rip the 1x12 down the center, it would help keep the board from warping once it's nailed in place.
*He who wrote the instructions on the template may not have been aware you could get 5/4x12. It isn't that common.
