I’m installing a bathtub surround that will leave a bare wall about 11 inches wide between the top of the surround and the ceiling of the bathroom.
What do you think of installing a run of bathroom tiles in that space? Additionally, I think I want to install a single row of tiles along the outside perimiter of the surround.
Is this just too much? Should I just prime and paint the exposed walls? I realize that tiling those areas is more labor intensive and requires more preventative maintenance.

If the surround is thin, you'll maybe be looking at using bullnose around the surround edge as well as on the open line on the wall. More costly than paint, but it can look good. Caulk the seam at the tile to surround.
