Hey Guys!
Trying to fit a luan panel in between one wall (out of plumb and wavy studs of course) and a tiled shower wall, which of course is not perfectly straight either. I need to have both side joints perfect, but am struggling on the best way to scribe and fit between two fixed points. Should I make a template with strips of ply, scribe each side and then copy that finished scribed template onto the panel? Any better ideas?

Use two scribe strips, set and scribe one side, then set and scribe the other. Fit the to the walls so you are satisfied.
If you have a hot melt glue gun then hold the scribes strips in place against their respective walls and tack a cross strip at 3 places across the width.
No glue gun you may try some of the Titebond trim glue, or even contact cement.
Anything that will allow you set the correct width and the pull the pieces as a unit for transference to you final sheet. Trim stapler , nails , screws.
When I have to scribe wall to wall I will set the piece to be scribed against one of the walls(plumb the piece), take your deviders and run it down the wall. Now take your piece out and clean to the line.
Now I measure from the side that I just scribed over to the other side. Say you have 45", then I will mark out on my sheet where the 45" hits. Set that end inbetween the two walls and set your deviders to so that they hit on the 45" mark and the wall that it fits to. Run your deviders down the wall, take the sheet out and remove all excess.
I used to work with a guy that would do the scribe but leave about 1/8" proud of the line, put it in to see if it fit and then take it out and take the 1/8" off! That does not make any sense to me cause what guarantee do you have that you'll hit it on the second pass!

Google "tick sticking". It is a method boat builders used as nothing was straight or plumb. It produces an exact fit.
