Okay- talk me out of it. I have two 8×8 smooth faced, insulated garage doors that I need to apply trim to make feel like ‘carriage doors.’ They, and the newly installed trim will be painted black to match the house’s trim.
My gut tells me to go with 1x cedar, my wallet says to precut, prime and paint pine or poplar prior to install. Or to use exterior ply or MDO.
What would you do?

What material is the house trim? That's what I'd use.
Steel doors? I'd be inclined towards a composite like Azek.
First, though, you should of course make sure that any added trim will clear the opening as the door opens. This might require lowering the topmost trim slightly.
Pressed hardboard garage doors.
I was going to use a composite, but don't think you can paint them dark colors without voiding the warranty.

Don't forget you may have to go up a size in springs.
Poplar would not be a good choice for outdoor applications. Douglas Fir is much better.

Could you use PVC trim material? I used some recently for the first time and was pleasantly surprised. It worked well with typical woodworking tools, took paint (Krylon) well and - after a couple of months in direct sun - looks as good as new.
I gotta admit that it felt a little weird to glue it up with the glue that I've always used to build sprinkler systems. - lol
I'd use either a PVC trim, like Azek or Koma, or a composite trim like MiraTec.
Both will take pretty much any paint color you want.
And like someone else said, double check your springs' ratings.
Might as well bolt up a hemi on the opener too , while he's at it.(G)

If the existing doors are hardboard, a little additional trim won't likely make much difference in weight.

You ever tried to lift a hardboard garage door without the springs attached? So long as he doesn't go overboard the additional trim isn't gonna make any difference.
