I’m looking to feed a video cable inside the soffit as a mean to access the attic which will allow me to feed the cable down inside the wall to the computer room on the second floor. The camera will be located at the back of the house at the top of the outside wall at ground level. Any solutions to a better way?

A video cable is "low-voltage" wiring and has few code restrictions -- you can run it pretty much anywhere that works (other than inside conduits and boxes used for power wiring).
Do observe reasonable precautions to avoid sharp edges going through the soffit, etc, and avoid "tight" bends (less than about 0.5" radius) or knots in the cable (which can affect signal quality).
I have found it is easier to shoot a piece of smurf tube into a blind hole and find it on the other side. Once you establish both ends you can shove any kind of wire you want in there. You can usually find 25' rolls at the home store. Stuff some duct seal or caulk in the raceway to keep the bugs out.

With a wireless setup you have to somehow get power to the camera. Which means a cable.

Potential for a small solar panel but if not......
power to the cam from attic via dropping it down over the wall into the overhanging soffit then no cable to receiver across the attic and the tough fish down that insulated ext wall .
