I need to install wainscoting over new framing. I will be using T&G 1×6 knotty pine installed vertically. I am assuming I will have to install horizontal furring across the framing. I was thinking 1×3 every 2 feet from the floor to the 4 foot level. Is this sufficient or should the spacing of the furring be closer?

Spacing is good, but you can also do it by putting blocking between the studs.

If I go between the studs (good idea, I do that for nailers for cabinets, I didn't think to do it that way), 2x's or 1x's, any difference?
I was going to use a 15 gauge finish nailer to nail through the tongue, do you think that is ok, and what about using narrow crown staples instead, 1 1/2", enough?

I like to use 1 1/4 staples..they hold just dandy..did a large cieling of cypress that way..still hangin on.

I'm doing the same thing for my soffets.
I spaced the 2x4's 16" OC.....whats another few inches.....(I didn't mean it to sound sexual...lol).
