I had a water leak in my basement, the water made its way down behind the wall. The wall has three 2×4’s running horizontally (one on top,bottom & middle) and 1 1/2 foam inbetween with drywall covering. My question is, will I have mold issues if I leave it to dry without tearing the drywall off or would I be better off taking the drywall down to let it dry? Has anyone ever dealt with this?

If the drywall itself hasn't gotten very wet (beyond a little dampness on the bottom inch or so) then there's very little back there to get moldy. So long the leak doesn't persist for a long time or recur at regular intervals you should be OK.
Like Dan said, you should be ok, but if you spot black spots blotching on the face of the drywall,have at it with a chlorox solution. I use 1/2 cup bleach, 1/2 cup TSP per 2.5 gallons of H2o...yeah it is overkill. But once dry, it is harmless.
