Just notch the studs so the lip sits flush and you are done.
Depends
It depends on several things. However, the major one to me is that if the rockers, or tile guys, do the shim out you will get the shimming done after the wood has had a chance to move if it is going to. This gives you a truer finished surface.
Framer
I rip a batch of 1/4" x 1-1/2" strips out of framing scraps and nail them to the studs.
In a remodel, where adjacent wall areas are not being gutted, you have to notch the studs and recess the unit slightly.
I have butted drywall to flange and use durobond and flat tape no notches
Usually no one.
No one shims studs around here anymore. Stop the rock and use durabond.
