Guys,
I’m making doors for dining room built ins. The doors are cope/stick and call for bronze wire mesh in lieu of a flat panel. My question is whether I should slide the wire mesh into the panel section before the glue up (like I would with a regular door), or whether I should assemble and glue up the frame and insert the wire into the back of the door like you would a glass insert.

You said it's a built in, so permanent fixture in the room? Something the next homeowner might not like?
Put them in after like glass, they can be swapped for something else later.
Do it like you would with glass, with a rabbet and quarter round.
I'll be making custom radiator covers soon and I was pondering the same point. It occurred to me that accidental dent becomes a major headache if I built it like a panel door.
Excellent Points about the homeowner and the dent. Ironically, I just found out there is some question now as to whether the wire mesh that was ordered is the correct color. I'll build the door so I can change the mesh later. FR
