I like lepage's cabinet makers wood putty. Comes in a tube like toothpaste. Doesn't shrink much and a tube goes a long way.

Ed,
Id never use a plaster related product on wood. I dont even use spackle on walls. If I am doing a fill job on walls I use real joint compound. I can put it on and there wont be a trace. I do use caulk on seams in walls sometimes.
For wood, I use wood filler. I expect it will shrink a bit and do multi coats, and its sandable. Sometimes Ill fill holes while caulking edges and seams on paint grade, but its really noticeable if you dont get all the excess, and you cant sand it.
Sometimes on stain grade I will use an oil, or dough putty after the coats of varnish.
Having multiple types on hand isnt a big investment as long as you dont leave it in the van in the winter... regularly.
